Puglia is a hot, welcoming region, rich in sun, seas and tastes. When covering the Puglia territory you can't help be fascinated by its complex and multicoloured appearance. The mysterious Gargano caves, the open sunny fields and rich colours of the Tableland, the wide grassy plains of the Murgia. The territorial appearance, which characterizes the Pulian region, the most is surely the presence of ancient and fragrant olive groves that fill the hills with their harsh stillness. The Puglia is a land with which the taste of the sea and that of the land melt creating some magical Pulian recipes, which express all their tastes. The Puglian territory, which is wide, flat, produces plenty of grain, grapes and olives.

The Puglian kitchen is homogenus even if the change of habits for example the use of garlic, stretches down from the Tableland to the Penisula Salentina, and also the place of the onion like in the Gallipolina kitchen.
