Maccaruni alla mulinara

600gr whole wheat, 4 eggs, 300gr beef meat, 300gr lamb meat, 300gr pork meat, 400gr peeled tomatoes, white wine, 1 olive oil glass, butter, onion, carrot, celery, pecorino, salt

Knead the flour with the 4 eggs until you get a ball in the centre of which you have to make a hole. You get a very long maccherone, you have to cut it so to obtain the dimensions you want. Let the maccheroni cook about 15 minutes long. Stir fry the meat together with the onion, the carrot and the celery finely chopped and mixed.
Dash the white wine and add the peeled tomatoes. Let it cook slowly at least 2 hours long.
The “mulinara” has to be seasoned with this sauce and adding a lot of grated pecorino from Abruzzo and has to be served still hot.
