In the Abruzzo plateaus gastronomy we have to mention the presence of some products that make this gastronomy typical and tasteful. One of these products is the Santo Stefano di Sessanio lentils that are flat and a dark brown colour. This legume has a haughty taste and is rich of iron. The historical origins of this legume are traced back to the Middle Ages when they reached Abruzzo coming from Turkey.
Another typical ingredient of this zone is the red garlic of Sulmona that has the characteristic to produce the “zolla” it means the floral scape, before the harvest. The shape of this garlic is also particular, the head is bigger, the cloves instead are inner of a white colour but are wrapped in a wine red coloured film.
