The Metaponto plain's gastronomy

The Metaponto plain is the only plain area in all the region and it faces the Ionio Sea. Certainly the most important element of the cooking of this zone is fish. Basilicata is known for the rich of flavours sea soups and for the fanciful recipes according to which lake's eels and trouts are cooked. Also the recipe to cook dried cod is really famous, according to that the dried cod is cooked into the oven together with vegetables or it is steamed also together with chilly pepper. Vegetables are used very much as side-dish. Among the recipes we have to mention the peppers mandorlata, the broth of chicory, and moreover the eggplants that are cooked in so many ways, fried, bittersweet and roasted.
