Cook the beans in a saucepan made of earthenware on a low flame together with cotiche (pigskin) and an ham bone. Apart prepare a mix of onion, garlic, carrots and celery and then add the beans previously cooked. Stir well and add to the tacozze (pasta made only of flour and water). |
