I posted this recipe also in Italian, but maybe someone that doesn't speak Italian wants to try it :D
Ingredients:
500 gr light Italian flour or plain flour
1 rounded tsp of bicarbonate of soda
1 rounded tsp of cream of tartar
1 tsp salt
125 gr unsalted butter (cold and cubed)
25 gr caster sugar
1 egg beaten
275 ml buttermilk or milk + a little bit for the eggwash
50 gr caster sugar or granulated sugar (optional)
How to prepare it:
1) Preheat the oven to 220 °C
2) Sift flour, bicarbonate, cream of tartar, salt in a bowl. rub in the butter until the mixture resembles breadcrumbs, add the sugar, mix well.
3) Set aside 1 third of the beaten egg and combine the rest with the buttermilk, then add to the flour mixture and mix briefly to combine into a moist dough. Place on a floured surface and knead just enough to bring together, then press or roll out to a thickness of 2 cm.
4) cut with a round cutter 12 scones and place on a baking tray. Add 1 teaspoon of buttermilk to the remaining beaten egg and brush the scones with the egg wash thath you have just obtained.
5) If you wish dip the top of the scones in sugar and bake in the oven for 10-12 minutes or until golden brown. Eat as soon as possible!!!
Variations:
Cinnamon, orange, chocolate chips, sultana or raisins > choose one of these ingredients and add to the flour mix before to add the liquid
Enjoy with clotted cream and strawberry jam :D
