Una ricetta per chi come me adora i carciofi:
IL MIO RISOTTO AI CARCIOFI x 6 persone
6 carciofi del mio orto
1 cipolla
0,5 l brodo vegetale
500 g riso Roma
½ bicchiere di vino bianco
Olio d’oliva extravergine
Parmigiano
Sale q.b.
Raccogliere i carciofi nell’orto (chi può!!!).

Mondare i carciofi e lavare.

Tritare nel mixer cipolla, gambi dei carciofi e 3 carciofi.

Mettere il tutto in una casseruola con l’olio, lasciare soffriggere ma non troppo, aggiungere il riso e tostare.

Cuocere il riso come al solito con il brodo, poco per volta.

Al termine mantecare con il parmigiano, rigorosamente niente burro.
