Oggi ho provato a cimentarmi anch'io....con l'uso del lievito di birra al posto di quello liofilizzato.
E questo è quello che bisogna fare il primo giorno:
INGREDIENTI:
500g. di farina, ho messo 300 manitoba e 200 normale
un decimo di un cubetto di lievito...a occhio....oppure 1gr. di lievito secco in polvere
1 cucchiaino abbondante di sale
350ml di acqua
ore 14

Ho sciolto il lievito in due dita di acqua prese dai 350ml.

Ho messo la farina e il sale in una bacinella grande e a bordi alti di plastica e ho dato una mescolata.

Ho messo l'acqua col lievito e poi la restante sulla farina e ho dato una mescolata veloce.

Ora si lascia questo impasto grezzo e appiccicoso a riposare nella terrina grande coperta da pellicola per circa 18/24 ore a temperatura ambiente, 20°.

A questo punto rovesciamo l'impasto su una spianatoia infarinata e spolveriamolo di farina.

Poi piegamolo su se stesso prendendo i 4 lati uno alla volta, come da sequenza fotografica.
Roberto61 ci spiega che:
Le piegature dell'impasto non servono per avere l' impasto bello in ordine, non "spiegazzato" quasi fosse una camicia da riporre nell'armadio.....esse servono per creare delle linee di tensione all'interno in modo che in cottura il pane possa crescere..crescere ed avere una bella mollica alveolata. Avete presente un bella tenda canadese o un gazebo?... ecco pensate che la tela starebbe su bella distesa se non ci fosse l'intelaiatura in ferro a sostenerla?....La stessa cosa più o meno accade con il pane in cottura.
Copriamolo con un altro foglio di pellicola e lasciamolo riposare per altri 15 minuti.

Quindi infariniamo un canovaccio con della semola (io ho usato del fioretto), cospargiamo dei semi di sesamo/papavero/finocchio/cumino a nostro gradimento, e con le mani infarinate deponiamoci il nostro impasto con la falda di chiusura sotto dandogli più o meno la forma della pentola dove lo cuoceremo....tonda o allungata...:) ;) Ricopriamo di semola e semini anche la parte soprastante dell'impasto.

Quindi chiudiamo bene il canovaccio e lasciamo lievitare per 2 ore.

Mezzora prima della lievitazione finita accendiamo il forno a 230° e mettiamoci dentro la nostra casseruola col coperchio (cuocipollo...non sapevo si chiamasse così...): può essere tutta in terracotta, in ghisa e terracotta come la mia, tutta in ghisa (le vendono così all'ikea...;) )....

Prendiamo il nostro impasto lievitato e siccome non è molto facile da maneggiare (è tutto mollo e scappa da tutte le parti...), con l'aiuto del canovaccio lo ribaltiamo nella pentola (attenzione che brucia!!!!....) cercando di riportare la cucitura verso l'alto. Questa operazione va fatta il più velocemente possibile per non raffreddare la pentola.

Copriamo e inforniamo sempre a 230° per 30 minuti.

Poi scoperchiamo la pentola e cuociamo altri 10/15 minuti per far colorire bene la pagnotta.
Il tempo di cottura è abbastanza soggettivo...dipende dal proprio forno e dal tipo di pentola usata...ogni materiale conduce calore in maniera diversa....Sicuramente bisogna lasciare la prima mezzora a pentola coperta per far sì che il pane lieviti benissimo e inizi a formare la crosta...magari si può allungare il tempo a pentola scoperta, o meglio si può trasferire il pane sulla griglia del forno in modo che si cuocia perfettamente dappertutto....:) ;)

:) Da Roberto61 consigli per la buona tenuta del pane:
- Far raffreddare completamente il pane per almeno 2/3 ore in quanto l'umidità ed il vapore presenti all' interno del pane fuori uscendo attraverso la crosta la renderanno molto pù morbida.
- Se invece si vuole una crosta molto croccante tagliare subito le estremità del pane (in caso di un filone) in modo che il vapore possa uscire subito da queste estremità.
- Mentre se si vuole la crosta e l' interno molto morbidi/umidi avvolgere in uno strofinaccio il pane appena uscito dal forno e quindi una volta raffreddato porlo in un sacchetto di plastica per alimenti.
:)Da Pap57 consigli su come congelare questo impasto da crudo:
L'impasto del pane può essere congelato già diviso per le quantità che ci necessiteranno. Quando lo scongeliamo abbiamo due possibilità:
- o lo lasciamo lievitare nuovamente, quando raddoppia di volume facciamo le pieghe e procediamo come da ricetta...
- oppure lo usiamo come pasta di riporto in una nuova panificazione. Siccome non è forte come il lievito madre se ne mette di più. Io ne metto circa 150 grammi sui 500 di farina.

:)Consigli di Roberto61: per chi come me ricerca/prova sempre nuove farine per questo tipo di pane devo far notare dopo recenti prove con semola di grano duro i seguenti risultati:
-semola di grano duro rimacinata: ottimo pane anche senza miscelarla con altre farine;
-semola di grano duro: da evitare senza aggiunta di altre farine panificabili in quanto usata da sola non crea la maglia glutinica e pertanto l'impasto risulta tale e quale un "semolino".
P.S. In perenne aggiornamento soprattutto se in buona fede posso aver omesso qualcosa o qualcuno....:) ;)
:)At this point....:rolleyes: :rolleyes: ...dopo tutte le nostre prove e riprove....credo che qualunque adattamento a questo pane non interferisca con l'eccellente risultato....:rolleyes: :rolleyes: ...mi spiego:
- lievitazione lunga: minimo 12 ore massimo 24...ognuno può disporre a seconda del suoi tempi di lavoro...;)
- lievitazione 15min. sotto pellicola: io non la faccio più e non c'è differenza...;)
- lievitazione breve: minimo 2ore massimo....anche 4/5....secondo necessità...;)
- tipo di pentola: QUALUNQUE...:eek: :eek: ....anche la teglia del forno e anche senza riscaldamento...;) ...e anche senza coperchio...;)
- impasto: anche con farine miste...;) ...anche pezzattura piccola, cioè panini, tipo zoccoletti, meglio ribattezzati CAZZOTTI...;)
Oggi ho provato a cimentarmi anch'io....con l'uso del lievito di birra al posto di quello liofilizzato.
E questo è quello che bisogna fare il primo giorno:
INGREDIENTI:
500g. di farina, ho messo 300 manitoba e 200 normale
un decimo di un cubetto di lievito...a occhio....oppure 1gr. di lievito secco in polvere
1 cucchiaino abbondante di sale
350ml di acqua

Ho sciolto il lievito in due dita di acqua prese dai 350ml.

Ho messo la farina e il sale in una bacinella grande e a bordi alti di plastica e ho dato una mescolata.

Ho messo l'acqua col lievito e poi la restante sulla farina e ho dato una mescolata veloce.

Ora si lascia questo impasto grezzo e appiccicoso a riposare nella terrina grande coperta da pellicola per circa 18/24 ore a temperatura ambiente, 20°.

Poi piegamolo su se stesso prendendo i 4 lati uno alla volta, come da sequenza fotografica.
Roberto61 ci spiega che:
Le piegature dell'impasto non servono per avere l' impasto bello in ordine, non "spiegazzato" quasi fosse una camicia da riporre nell'armadio.....esse servono per creare delle linee di tensione all'interno in modo che in cottura il pane possa crescere..crescere ed avere una bella mollica alveolata. Avete presente un bella tenda canadese o un gazebo?... ecco pensate che la tela starebbe su bella distesa se non ci fosse l'intelaiatura in ferro a sostenerla?....La stessa cosa più o meno accade con il pane in cottura.
Copriamolo con un altro foglio di pellicola e lasciamolo riposare per altri 15 minuti.

Quindi infariniamo un canovaccio con della semola (io ho usato del fioretto), cospargiamo dei semi di sesamo/papavero/finocchio/cumino a nostro gradimento, e con le mani infarinate deponiamoci il nostro impasto con la falda di chiusura sotto dandogli più o meno la forma della pentola dove lo cuoceremo....tonda o allungata...:) ;) Ricopriamo di semola e semini anche la parte soprastante dell'impasto.

Mezzora prima della lievitazione finita accendiamo il forno a 230° e mettiamoci dentro la nostra casseruola col coperchio (cuocipollo...non sapevo si chiamasse così...): può essere tutta in terracotta, in ghisa e terracotta come la mia, tutta in ghisa (le vendono così all'ikea...;) )....

Prendiamo il nostro impasto lievitato e siccome non è molto facile da maneggiare (è tutto mollo e scappa da tutte le parti...), con l'aiuto del canovaccio lo ribaltiamo nella pentola (attenzione che brucia!!!!....) cercando di riportare la cucitura verso l'alto. Questa operazione va fatta il più velocemente possibile per non raffreddare la pentola.

Poi scoperchiamo la pentola e cuociamo altri 10/15 minuti per far colorire bene la pagnotta.
Il tempo di cottura è abbastanza soggettivo...dipende dal proprio forno e dal tipo di pentola usata...ogni materiale conduce calore in maniera diversa....Sicuramente bisogna lasciare la prima mezzora a pentola coperta per far sì che il pane lieviti benissimo e inizi a formare la crosta...magari si può allungare il tempo a pentola scoperta, o meglio si può trasferire il pane sulla griglia del forno in modo che si cuocia perfettamente dappertutto....:) ;)

:) Da Roberto61 consigli per la buona tenuta del pane:
- Far raffreddare completamente il pane per almeno 2/3 ore in quanto l'umidità ed il vapore presenti all' interno del pane fuori uscendo attraverso la crosta la renderanno molto pù morbida.
- Se invece si vuole una crosta molto croccante tagliare subito le estremità del pane (in caso di un filone) in modo che il vapore possa uscire subito da queste estremità.
- Mentre se si vuole la crosta e l' interno molto morbidi/umidi avvolgere in uno strofinaccio il pane appena uscito dal forno e quindi una volta raffreddato porlo in un sacchetto di plastica per alimenti.

L'impasto del pane può essere congelato già diviso per le quantità che ci necessiteranno. Quando lo scongeliamo abbiamo due possibilità:
- o lo lasciamo lievitare nuovamente, quando raddoppia di volume facciamo le pieghe e procediamo come da ricetta...
- oppure lo usiamo come pasta di riporto in una nuova panificazione. Siccome non è forte come il lievito madre se ne mette di più. Io ne metto circa 150 grammi sui 500 di farina.

:)Consigli di Roberto61: per chi come me ricerca/prova sempre nuove farine per questo tipo di pane devo far notare dopo recenti prove con semola di grano duro i seguenti risultati:
-semola di grano duro rimacinata: ottimo pane anche senza miscelarla con altre farine;
-semola di grano duro: da evitare senza aggiunta di altre farine panificabili in quanto usata da sola non crea la maglia glutinica e pertanto l'impasto risulta tale e quale un "semolino".
P.S. In perenne aggiornamento soprattutto se in buona fede posso aver omesso qualcosa o qualcuno....:) ;)
:)At this point....:rolleyes: :rolleyes: ...dopo tutte le nostre prove e riprove....credo che qualunque adattamento a questo pane non interferisca con l'eccellente risultato....:rolleyes: :rolleyes: ...mi spiego:
- lievitazione lunga: minimo 12 ore massimo 24...ognuno può disporre a seconda del suoi tempi di lavoro...;)
- lievitazione 15min. sotto pellicola: io non la faccio più e non c'è differenza...;)
- lievitazione breve: minimo 2ore massimo....anche 4/5....secondo necessità...;)
- tipo di pentola: QUALUNQUE...:eek: :eek: ....anche la teglia del forno e anche senza riscaldamento...;) ...e anche senza coperchio...;)
- impasto: anche con farine miste...;) ...anche pezzattura piccola, cioè panini, tipo zoccoletti, meglio ribattezzati CAZZOTTI...;)
