in previsione del Natale e dei panettoni, anche se siamo un pò a ridosso, proviamo a fare insieme la pasta madre?
gli ingredienti sono pochi pochi, più che altro ci sono i tempi di attesa.... sempre incrociando le dita! ;)
serviranno:
farina (a piacere manitoba, 0 o 00) ed acqua di base
poi a piacere: miele ed olio, o yogurt, pomodoro, uva, mela, qualsiasi frutta (ottima la banana)
per me si può partire anche domani sera, se fosse troppo presto vediamo di spostare la data, in ogni caso di fatto si impiegheranno giusto 5 minuti per fare l'impasto, poi ci mettiamo in attesa.....

200 gr farina
90-100 gr acqua
1 cucchiaio d'olio
1 cucchiaio di miele
mettere la farina sulla spianatoia, al centro fare una buchina e metterci il miele e l'olio
poi aggiungere l'acqua
fare un impasto omogeneo e metterlo in un contenitore unto d'olio
fare un taglio a croce sopra per seguire la maturazione

riassumendo: fare gli impasti e mettere in un contenitore unto d'olio
fare sopra un taglio a croce con l'aiuto di una spatolina
ricoprire con un piatto e mettere in un luogo non freddo (io ho messo nel forno con la luce accesa)
per aiutare il tutto:
mettete vicino gli avanzi delle bucce, altra frutta tagliata, qualsiasi cosa che "inquini" l'ambiente ;)
i tempi di maturazione possono variare tantissimo! bene è lavorare in un ambiente dove si è panificato e, come scritto sopra, con frutta matura che rilasci spore
e... attendere!!!! ;)

se non dovesse venire, un metodo per farla ripartire è questo:
prima di questo cucinare insieme, ho fatto delle prove per trovare i dosaggi e i tempi.
una delle paste madre preparate, quella allo yogurt, non andava in parallelo con le altre ed era statica.
quindi ho proceduto ad un "ritocco" che ha funzionato per farla partire ;)
vi metto un pò di foto, fatte nello scorrere del tempo, c'è la foto che questa volta non sono riuscita a fare di tutti i contenitori insieme :)

a questo punto, visto che non era successo niente, ho preso l'anima dell'impasto (il sopra era pure seccato tutto), ho aggiunto pari peso di farina, un altro cucchiaino di yogurt, acqua quanta bastava ad ottenere un impasto omogeneo e non troppo duro)
poi mi sono messa di nuovo ad aspettare e nel giro di 12 ore è ripartita e poi la vedete nella foto finale dopo 24 ore dall'aiutinio che è venuta benissimo

si impasta bene il tutto, si mette nuovamente in un contenitore unto d'olio, si copre e di nuovo... si aspetta!

Per la conservazione:
meglio tenerela in contenitori di vetro, evitare la plastica
ricoprire il contenitore con pellicola o con il suo coperchio
mantentere possibilmente fuori dal frigo, mettere in frigo solo se la pasta madre sarà ben matura e abbondante
mettere in frigo dopo diverse ore dal rinfresco quando avrà ripreso a riattivarsi
quando si dovrà utilizzare, levare dal frigo una mezza giornata prima
non mettere mai in freezer, cosa assolutamente negativa, la uccide!!!!!

per me si può partire anche domani sera, se fosse troppo presto vediamo di spostare la data, in ogni caso di fatto si impiegheranno giusto 5 minuti per fare l'impasto, poi ci mettiamo in attesa.....

200 gr farina
90-100 gr acqua
1 cucchiaio d'olio
1 cucchiaio di miele
mettere la farina sulla spianatoia, al centro fare una buchina e metterci il miele e l'olio
poi aggiungere l'acqua
fare un impasto omogeneo e metterlo in un contenitore unto d'olio
fare un taglio a croce sopra per seguire la maturazione

riassumendo: fare gli impasti e mettere in un contenitore unto d'olio
fare sopra un taglio a croce con l'aiuto di una spatolina
ricoprire con un piatto e mettere in un luogo non freddo (io ho messo nel forno con la luce accesa)
per aiutare il tutto:
mettete vicino gli avanzi delle bucce, altra frutta tagliata, qualsiasi cosa che "inquini" l'ambiente ;)
i tempi di maturazione possono variare tantissimo! bene è lavorare in un ambiente dove si è panificato e, come scritto sopra, con frutta matura che rilasci spore
e... attendere!!!! ;)

se non dovesse venire, un metodo per farla ripartire è questo:
prima di questo cucinare insieme, ho fatto delle prove per trovare i dosaggi e i tempi.
una delle paste madre preparate, quella allo yogurt, non andava in parallelo con le altre ed era statica.
quindi ho proceduto ad un "ritocco" che ha funzionato per farla partire ;)
vi metto un pò di foto, fatte nello scorrere del tempo, c'è la foto che questa volta non sono riuscita a fare di tutti i contenitori insieme :)

a questo punto, visto che non era successo niente, ho preso l'anima dell'impasto (il sopra era pure seccato tutto), ho aggiunto pari peso di farina, un altro cucchiaino di yogurt, acqua quanta bastava ad ottenere un impasto omogeneo e non troppo duro)
poi mi sono messa di nuovo ad aspettare e nel giro di 12 ore è ripartita e poi la vedete nella foto finale dopo 24 ore dall'aiutinio che è venuta benissimo

si impasta bene il tutto, si mette nuovamente in un contenitore unto d'olio, si copre e di nuovo... si aspetta!

Per la conservazione:
meglio tenerela in contenitori di vetro, evitare la plastica
ricoprire il contenitore con pellicola o con il suo coperchio
mantentere possibilmente fuori dal frigo, mettere in frigo solo se la pasta madre sarà ben matura e abbondante
mettere in frigo dopo diverse ore dal rinfresco quando avrà ripreso a riattivarsi
quando si dovrà utilizzare, levare dal frigo una mezza giornata prima
non mettere mai in freezer, cosa assolutamente negativa, la uccide!!!!!
