    Lasagne with radicchio

    My mum ate this lasagne in a restaurant and we tried to replicate the recipe, I have to say, it is really good and can be also turned into a vegetarian dish.

    Ingredients:
    Lasagne sheets (that depends on how many people you are, for two people I use 1 pack of fresh lasagne sheet) at home in Italy my grand mum prepares the sheets by her own but here I don't have the ncessary equipment, so I have to buy it.

    Radicchio
    Onion
    Prosciutto crudo (a tick slice)
    Besciamella sauce
    Parmesan cheese or grana padano cheese
    salt and pepper


    Mince the onion, then put in a pan with some olive oil on a medium heat until they are translucent, then put the radicchio (cutted in very thin slices) in the pan until is soft, in the last two minutes put the ham cutted in stripes, give a stir and turn off the heat. Prepare a besciamella souce, any classical recipe is good, then mix the radicchio and ham inside the besciamella.
    Now you need a baking tray, put a first layer of sauce, then 1 layer of lasagne sheet, then the mixed sauce again, parmesan and the lasagne sheets again...go on like that until you finish all the ingredients, is important to finish on the top with a layer of sauce and parmesan on the top of it, to have a nice crunchy part when your lasagne will come out from the oven.
    At this point you can freeze them, or put directly on the oven covered by alluminium foil, 180 degrees for half an hour, then uncover and put in the oven again for few minutes until golden and crunchy.
    I suggest to prepare one day in advance if is possible so the pasta will absorb all the flavours and will be much better! You can put sausages insted of ham or if you are vegetarian use only the radicchio or maybe put some sliced mushrooms to have a meathy sensation

    my mother do lasagne with radicchio until I was child! cooool!
